Butter is an essential ingredient in our Indian kitchens and is used in a variety of dished to make them richer, creamier and tastier. Do you know that their are 2 different types off butter-yellow and white. Know the difference between the two?

1.Yellow Butter:-

Yellow Butter is also known as salted butter is known for its combination with toast. The color of butter is yellow because of the high-fat content in it. The addition of salt to the butter increases its shelf life and makes it last longer. Yellow Butter is processed and contains high amount of trans-fat which makes it high in calories as well. If it is consumed in excess, yellow butter might spike the sodium levels of the body, which can further spell trouble for those with high cholesterol levels.

2.White Butter:-

White Butter, also known as Makhan, is a natural, un-processed version of butter and contains healthy fats. It can be easily made at home with the help of Malai. Buttermilk is a by-product that you get during the process of converting Malai to Makhan. Buttermilk is highly beneficial for your stomach and even helps with weight loss. After making White Butter, it can be further used to make homemade ghee. Compared to Yellow Butter, Makhan has a lower shelf life, but when stored in the freezer, it can last long.

While it is safe to consume both white and yellow butter in moderation, if you are a regular consumer of butter, it is best to switch to White Butter. The best thing about White Butter is that it can be made at home and is free of any kind of processing, chemicals, colour and salt. 1 tablespoon of White Butter contains around 90 calories, while 1 tablespoon of Yellow Butter contains almost 105 calories.

4.How to make White Butter at home:-

  1. Take 1 bowl of malai (at room temperature) and add it to a blender jar.
  2. Add 1 cup cold water to the blender and blend it. It is best to blend on pulse mode
  3. Now open the blender jar and take out the components in a bowl.
  4. You will notice that the Makhan has separated and has left a watery liquid behind.
  5. Add 1 more cup of cold water to the bowl and gently take out the butter chunks from it.
  6. Lightly squeeze the Makhan between your hands and place them in a bowl.
  7. Let the White Butter set in the fridge for 10-12 minutes and then it is ready to be used.
